Guacamole Wednesday

What’s up everybody!!! It’s Wednesday and I wanted to celebrate that we have only two more days till’ Friday!! What a better way to celebrate than Guacamole!! Oh my God I love guacamole, especially my husband’s guacamole, it’s the best I ever had and I’m not saying this just because I’m crazy in love with him, it’s the truth.

Que rico guacamole!! and it only took me 10 minutes to do it. You’ll need 2 medium avocados (halved, seeded and peeled), 2 chopped green onions, 2 chopped tomatoes, 1/2 cup of chopped cilantro, juice of 1 lemon, 4 tsp of olive oil, salt and pepper. (I forgot to put the green onions in the pic, oops)

Start by smashing your avocados in a bowl, leaving some chunks. Add 2 chopped tomatoes, 2 chopped green onions, 1/2 cup of cilantro, and the juice of 1 lemon.

Then add 4 tsp of olive oil, and as much salt and pepper as you like, mix well and dig in!! If you want to make more guacamole just double all the ingredients and if you like spicy add some chopped jalapeños.

Right now I’m watching Who wants to be a millionaire? It’s one of my guilty pleasures, and I feel so bad when someone is doing really well and suddenly loses everything… breaks my heart. Yesterday a contestant was on the $500.000 question and he lost!!! I was so bummed!! I’ve never seen anybody win the million dollars and I want to, or my life won’t be complete.

I’ll stop embarrassing myself with my secret love for game shows, what about you guys? You must have a guilty pleasure, are you brave enough to share it? Lol! Have a great day!!

Rico Guacamole (Serves 2)

Ingredients

  • 2 medium avocados, halved, seeded and peeled
  • 2 chopped tomatoes
  • 2 chopped green onions
  • 1/2 cup of chopped cilantro
  • 4 tsp of olive oil
  • Juice of 1 lemon
  • Salt and pepper

Directions

  1. Place the scooped avocados in a bowl and smash them, leaving some chunks.
  2. Add the tomatoes, green onions and cilantro. Drizzle with the lemon juice and mix well.
  3. Add the olive oil and season with salt and pepper to taste. Mix everything and enjoy with tortilla chips!!
